I LOVE to cook with the crock pot, or the skillet in the summer. I don't like to heat up the entire house. I have had a real hard time lately finding dishes for the entire family. Last summer I was limited by Jeremiah's food allergies, but not like this summer, Jonathan's take the cake. Literally, his allergies take away cake, pizza, four tortillas, breads... and the list goes on. I fully admit there are far worse things, and after Jeremiah was cleared, it is well worth the sacrifice. But the search for tasty, wheat free meals made on the stove or crock pot has been a rough road. I was blessed when I "happened" onto a website that has about 70 blogs from wheat free cooks! And one is dedicated to crock pot cooking, she makes something new in her pot everyday! She is funny and makes crazy stuff you'd never think to make in your crock pot. Like cheesecake! So I have really enjoyed her blog. I went to the grocery store, aka wal mart, and got my needs for the meals I had planned for several weeks. Last night, I realized, I had planned EVERYTHING for crock pot cooking. So, we were in trouble. Luckily, I had gotten stuff for ONE quick meal. And that is what I want to share with you, I loved it!
It is called Country Skillet Supper, I got it from the First Baptist Church ~ Mexia cookbook.
8 slices bacon
4 med potatoes
3 carrots (I would have used more)
1 bunch broccoli
1 onion
1 lb of eckridge sausage (I only used half a pound)
fry bacon in skillet until crisp. remove. slice and saute the carrots, potatoes, and onion in the bacon grease until tender. (The onion went fast, and the carrots were slow, so I would do the carrots first for a bit, then add the potatoes, and last the onions. I also should have sliced the carrots thinner.) Add in sliced sausage and broccoli. cover and heat 12 minutes. Top with crumbled bacon. ( I would precook my sausage next time too, I prefer it browned, strange, I know)
This stuff was so yummy. The veggies had a great flavor and texture. This was super yummy, I HAD to share it, and it is a prefect skillet meal for summer.
